I used the full cup of cheese and heavy whipping cream instead of milk:<br /><br />THREE HEN QUICHE<br />Makes one quiche<br /><br />Olive oil<br />1/3 cup diced onion<br />1 broccoli crown, chopped into 1” pieces<br />3 large eggs<br />1 cup milk<br />Salt & pepper to taste<br />1 piecrust - prebaked<br />½ to 1 cup grated cheddar and Monterey jack cheese<br />If adding bacon or sausage precook meat<br /><br />Preheat oven to 350F. Heat olive oil in a skillet on medium high heat. Saute onions until they are browned and fragrant, then put them aside in a small bowl. Pour about ½ cup of water into the skillet and steam the broccoli over medium high heat. When tender set broccoli aside in small bowl.<br /><br />Beat eggs together with the cup of milk. Add a little salt and pepper to taste. Toss the onions and broccoli into the piecrust and pour egg mixture over them. Grate cheese over the top. Bake uncovered for 45 to 50 minutes.
